Oh also another thing. How many partitions would you recommend for a dual booted system? (Ubuntu/Win7)

I'd say 4. 2 for the OS's and 2 smaller once for page filing.

Basically virtual memory ad all the cache nonsense that Windows, for example, doesn't trite to the RAM.

Yip you should be able to, unless you're set permissions in the OSs.

I cannot for the life of me remember if uBuntu page files or not!

I think about 5GB or so? You may need to just Google it to check your needs.

Spoke to Merkaba (resident uBunto goto guy, and former LO member) and he thinks it does page-file, but he's not 100% sure.

Out of personal experience I'm lazy, so I usually just a partition per OS install and leave it at that. So you can do that and it'll work. How much RAM do you have?
